Notts County's win was their first away in 2009 and defeat plunges Bournemouth back into the relegation issue after their recent improvement.
Bournemouth should have been ahead in the third minute but Pilkington made a double reflex save from Jeff Goulding and Anton Robinson. From the second rebound Brett Pitman clipped the top of the bar with his left-foot shot.
Pitman was through again in the seventh minute but Pilkington came out to smother the shot on the edge of the area.
Notts County regained their poise and took the lead in the 39th minute. Delroy Facey set up Weston who turned sharply from 12 yards before scoring with a low left-foot shot.
Notts County should have been further ahead two minutes later when Bournemouth goalkeeper Shwan Jalal brought down striker Jamie Forrester to concede a penalty. But Forrester's weak spot-kick was easily saved by Jalal.
Weston had a 46th minute shot on the run turned over by Jalal and substitute Jonathan Forte hung his head in shame after losing control when played clear of the Bournemouth defence.
Bournemouth spent the rest of the match on the attack and came close to earning a vital point in the last minute. A fierce low shot from substitute Shaun Cooper was pushed away at full stretch by Pilkington diving to his left.
Facey also had a clear opportunity for Notts County after the pacey Weston had got down the left and picked him out with a superb cross but his header from ten yards flew straight at Jalal.
